針對海底撈等火鍋底料檢出反式脂肪酸，海底撈所屬頤海（上海）食品有限公司回應稱：

“我司濃香牛油火鍋底料中檢測到微量反式脂肪酸 (0.12g/100g)，根據我司查證分析，產品濃香牛油火鍋底料中含有動物油脂牛油，反芻動物（如牛、羊和駱駝）的肉和乳制品中常存在天然反式脂肪酸。”
